the executables are.
/usr/bin/7z
/usr/bin/7za
/usr/bin/7zr

try .
man p7zip

you should find it in context menu or use it from CLI

Hello,

You must use the command line, it's not hard, check this for example:

You need to try Archive Manager(file-roller) as it already has support for 7z in it including password protection.

You don't even have to open Archive manager, just select the files in the the File Manager(Nautilus), right click and select compress. From there you will have a window where you can alter the settings, including selecting 7z as the compression format and settings a password.

You see, in Linux, a separate gui is not needed as it is integrated into the file manager.
